Tostadas are one of my big discoveries after spending time in Mexico. I never made them before Cozumel, and now I munch on them on a weekly basis!
There is something tremendously satisfying about eating them -- maybe it's the crunch, maybe it's the higher fillings-to-tortilla ratio....either way I am hooked on them π
Another big discovery was baking my own tostada shells. This is super easy and will make Tostadas a permanent part of your home kitchen so please try it out! I'll include a post that has details on this process.

Bean Tostadas with Avocado, Queso Fresco, and Homemade Salsa
I make impromptu versions of these Bean Tostadas all the time! That's one of the main benefits of keeping some of these refried beans in the fridge. Top your Tostadas with avocado bits and just like that dinner is served π
Easy Chicken Tostadas with Salsa de Aguacate
Salsa de Aguacate is a delicious, creamy green sauce that works wonders on Tostadas -- please keep it in mind for your Tostada escapades! I loaded these up with chicken, cheese, beans, and plenty of the Salsa de Aguacate. Yum π
How To Make Tostada Shells
Here's the easy "bake your own tostada shells" method. Simple rub some oil on both sides of corn tortillas and bake each side for 4-5 minutes in the oven. It's a super easy technique that I use all the time -- be sure to use thin corn tortillas for best results.
Ground Beef Tostadas
Here's a great recipe for that ground beef that's sittin' in your fridge! I love infusing ground beef with the smoky heat of chipotles so that's what I did for this batch. And then I topped these Tostadas with cabbage, Queso Fresco, and a squeeze of lime...and they were off-the-charts delicious π
Easy Breakfast Tostadas
Refried beans, eggs, and cheese on a warm crunchy Tostada shell? Sold! I scrambled these eggs with ham, onion and jalapeno, but feel free to get creative with your eggs -- I will sometimes even make over easy eggs for some yolk-tastic Tostadas π

This is one of my favorite combos on the site! Chicken Chile Verde, refried beans, Queso Fresco, cilantro, and a squeeze of lime -- I make huge batches of this Chicken Chile Verde and then munch on these beauties all week long π
