    What Can I Make with Hatch Chiles? 5 Easy Mexican Recipes

    Have you used Hatch chiles yet?  The markets will be overflowing with them over the coming weeks so please keep an eye out for them!

    They have a wonderfully unique flavor that will keep you coming back for more 🙂

    Here are some great recipes to get your Hatch journey started.  Keep an eye out for the enchiladas as that recipe takes full advantage of the delicious Hatch flavor!

    Hatch Green Chile Enchiladas

    Please start with this Hatch enchilada sauce!  I make chicken and cheese enchis with it, but feel free to sub out your preferred protein.  The Hatch chiles are doing all the heavy lifting -- you won't need to do much else to make a killer enchilada sauce!

    Hatch Chile Soup

    This Hatch Chile Soup is a great way to get familiar with the unique, buttery flavor of Hatch Chiles -- but consider yourself warned as it is spicy!   And that is how it is best served 🙂

    Hatch Chicken Chile Verde

    I love making big batches of this when I have loads of Hatch chiles on hand.   Chicken Chile Verde is a versatile shredded chicken recipe, and when you add Hatch chiles to the mix you get something completely unique 🙂
     
    Make a big batch of this Hatch Chicken Chile Verde and you'll be in Hatch Heaven over the coming days! It's a delicious, all-purpose recipe and you can use it for tacos, tostadas, even burritos!
     
     

    Green Chile Cornbread

    You can use your Hatch chiles to make a delicious batch of Green Chile Cornbread.  It's a super easy recipe that I usually make with chipotles, but when you use Hatch chiles you are in for a treat!   
     
    If you've got Hatch chiles laying around then please try this Hatch Green Chile Cornbread! It's an easy recipe and the unique flavor of the green chiles pairs effortlessly with the cornbread. 
     
     

    Roasted Hatch Chile Salsa

    Plop your Hatch chiles and a couple tomatoes in the oven for a quick roast and you've got everything you need for a delicious batch of Hatch Chile Salsa.  So easy...and so good!

      Hatch may be the most famous, but anyone around Pueblo, CO knows that Pueblo Chilis are even better than Hatch! If you are ever in the area around this time of year, check em out! We even have the Pueblo Chili Festival 😎
