The goal of the Cooking Course is to get your kitchen pumping out authentic Mexican on a regular basis. And since most of us have limited time for cooking during the work week, making your own tortillas isn't something that you have to do for each meal.
I'll be the first to admit that I frequently use store-bought tortillas in some of my home-cooked meals. It's usually the sauce (or salsa) that is going to make or break the dish, not the tortilla.
But there is a distinct advantage to getting familiar with the tortilla-making process. It will give your palate a world-class tortillameter for the rest of your life. You'll be able to gauge the quality of store-bought tortillas in your neighborhood based on how they compare to your homemade tortillas.
Being picky on your store-bought tortillas will ensure that they are "good enough" for your home-cooked Mexican food. You'll quickly hone in on which local brands are producing quality tortillas in your region.
