Vegetarian Dishes

May 21, 2018 By Patrick

Welcome to the Vegetarian Module!  But wait, even if you’re a carnivore don’t give up on these recipes just yet.

One of Mexican cuisine’s greatest attributes is the versatility.  Nearly every dish can be customized to fit your protein of choice.  And that includes dishes that are typically served vegetarian.

Why?  Because it’s usually the sauce (or salsa) that makes or breaks the dish, not the protein.  And you’re getting really good at Mexican sauces!

So as you peruse through these vegetarian recipes feel free to let your inner carnivore run wild and customize them as you see fit.

First up is a classic Mexican Lentils and Rice dish.   In the Module table below, simply click on the first recipe (Mexican Lentils and Rice) to get started.

Module Recipes
  • Mexican Lentils and Rice
  • Avocado Hummus and Cucumber Pico Tostadas

  • Black Bean and Corn Salsa
