Hard to believe it's already time for a year-end Best of the Best list, but here we are!
This list has my favorite recipes that were new on the site in 2022, but it also has the old reliables that I made most often in my kitchen this year. So you can think of it as a list of all the recipes that I got the most mileage from this year.

Picadillo Stuffed Poblano Peppers
These Picadillo Stuffed Poblano Peppers want to be part of your life! I stuffed these with a hearty beef mixture and they were dee-licious. Don't forget to roast the Poblanos as that is the key to unlocking their unique flavor.
This Carnitas recipe adds in a quick brine to give the pork a bump in flavor -- I was thrilled with the results after adding in that step. Serve up your Carnitas Tacos with some freshly made Salsa Verde and you'll be a happy camper for the next few days 🙂

I make these Pickled Jalapenos and Carrots about once per month, and yes, you can munch on them straight from the jar! But they also work wonders on tacos, eggs, sandwiches, and even as a final burst of acidity on soups. Please try this one out if you're new to it as it's one of the most popular recipes on the site.

You really can’t beat Arroz con Pollo for a one-pot meal — with minimal effort you get a savory meal that is far superior to your local takeout options. Feel free to get creative with the scrumptious rice over the coming days. You can use it in so many creative ways: burritos, tacos, tostadas, or even just mixed with some black beans.
The soul-warming flavors in this Pozole Verde keep me coming back to it! Combining tomatillos with that unique roasted Poblano flavor creates something completely unique to Mexican cuisine. This is a great dish to keep in mind if you're new to it!

Do you need a new breakfast for lazy mornings? I can't get enough of these Vegetarian Breakfast Burritos. Loading them with fresh Pico de Gallo is the key so please don't skip that step!
These Ground Beef Tostadas provided so many quick meals for me this year. They're a welcome upgrade to the beef hardshell tacos I grew up with! I top them with a homemade Salsa and that makes them a total keeper 🙂

Keep this impromptu Bean Dip in mind for weeknights when nothing sounds good -- it's fast, easy, and wildly satisfying! I dip some crispy, cheesy corn tortillas in it and all is well in the world for a few bites 🙂

This is a quick meal that I was making all the time when first learning about Mexican food. The Avocado Salsa Verde was an absolute revelation for me and it can turn any burrito into a masterpiece. I still come back to this combo on a regular basis for some easy, satisfying meals 🙂
Authentic Pico de Gallo
I get so much mileage from Pico de Gallo! It's super easy to make and you can easily design quick, satisfying meals around it, like Vegetarian Breakfast Burritos, Molletes, Chicken and Guac Quesadillas, and of course....Black Bean Nachos!
This is the most recent recipe on the list and I think it's a total keeper! I love making soup using this roasted tomato technique -- it creates such a satisfying flavor and gives you plenty of leeway on the other fixings.
Posole is typically simmered with pork, but here I'm making a vegetarian version and it can be just as satisfying when you make a few key adjustments. I made gallons of this Posole over the past year and it brought me loads of soul-warming meals, I hope it does the same for you!
Easy Ground Beef Burritos
The combo of chipotle-infused beef and Pico de Gallo is all you need for a quick, satisfying batch of burritos — that’s the key to these Easy Ground Beef Burritos. Sure, you can load them up with other fixings if you want, but I regularly come back to this simple combo when I’m craving a delicious, no-thinking-involved meal.
Charro Bean Tostadas
Keeping some Charro Beans in the fridge will lead to quick-n-easy meals like these Charro Bean Tostadas. Charro Beans are absolutely loaded with flavor so you really don't need much else to make these Tostadas -- I topped with Pickled Jalapenos, Queso Fresco, and some freshly chopped cilantro....yum!
Roasted Poblano Soup
This recipe is still the most debated on the site! Some people think it's too spicy, and some people love it. You can probably guess which camp I'm in 🙂 If you like that awesomely unique roasted Poblano flavor then it's worth trying out this Soup as it has the potential to be your new favorite!
Beef Birria -- Birria de Res
I seem to crave this Beef Birria about once every three months or so, have you tried it yet? When you let the beef simmer away in a sauce made from dried chiles then really, really good things will happen 🙂
Awesome Refried Beans
And what list would be complete without mentioning these chipotle-infused refried beans? I get TONS of mileage from this recipe and use them in so many different ways, including these Refried Bean Tostadas and these Spicy Bean and Egg Burritos.
